What did you want to be when you grew up?

 I wanted to drive the Mach 5, not be Speed Racer. (look it up)

What is your favorite hobby?

 I like to spend time in my garden that gets larger each year.

Where would you like to travel to?

Somewhere I can go 4 wheeling in a side by side.  MOAB?

What is one fact people do not know about you?

I almost killed myself when I was in 8th grade by hanging onto a friend’s motorcycle while on my bicycle. High speed wobbles are a real thing. If I would have rode my bike home the doctor says I would of lost so much blood internally it would have been fatal. My friend brought me home on his motorcycle.

What is a valuable lesson you learned in your career?

Everybody interviews well. After the interview is another story.

Where do currently work?

Franks Backyard BBQ in Cedar Lake. Best of the Region for Barbecue 6 years in a row.

What other jobs outside F&B have you had?

Labor for bricklayers.

Describe your career in three words.

Rewarding, Exciting, Terrifying.

What kind of careen advice would you give a younger person?

On-time is 5 minutes before your shift. On-time is late. Don’t call off, observe, take notes, ask questions, just not the same question over and over.

What is most enjoyable for you about this industry?

Guest satisfaction, giving back with my skill set by providing for others.

While this career has been rewarding I’ve missed a lot of things over the years. I’ve had people in restaurants tell me all the time they know the General Manager as if they deserve special treatment. My favorite response was, oh yes he / she is a great person but not everyone knows the Chef.
